Test interruptions, background noise, callers changing their mind and failed transfers. Include people who have not seen your script; familiar testers often skip the moments that confuse real callers.
Review the end-to-end outcome, not only transcription quality. A call that sounds polished but loses the booking or drops the transfer has not completed its job.
